It’s Thursday – Let’s Cook

I don’t know why but I have more cookbooks than you can shake a ladle at. Add in the fact my wife hates me being in the kitchen (especially with a recipe book ) as apparently I leave ‘chaos’ behind, It leads to quite a cooking dichotomy in my life. However, hawing more time on my hands has led to me becoming brave, getting the recipe books out again and starting simply, to avoid annoying my poor wife.

One of my friends had started an 800 calorie a day diet, and, although I wasn’t prepared to go that far, his efforts galvanised me to start losing weight too. So, first thing to get out of the pantry was the slow cooker. It hadn’t been used for a while but it wasn’t long before it was all clean again and cooking homemade vegetable soup. Simple to prep, 4 hrs on high, bit of sizzing, et voila, creamy vegetable soup.

Very few calories. Covered two nights dinner. Success in a soup plate. So, week 2 we made a spicy sweet potato soup, and today, a spicy cauliflower soup from Marcus Waerings ‘Marcus at Home’ cookbook.

Marcus is currently presenting Masterchef the Proffesionals on BBC 1. Last night he was scaring some young Chetfs by giving them a skills test. The contestants had to make a sweetbread with caramelised onion tart and a beet vinaigrette jus in 20 minutes!

Thankfully his cauliflower soup recipe is a lot simpler.

Ingredients

1 large cauliflower

1 onon sliced

1 tsp cumin seeds

400ml tin coconut milk

1/2 tsp mild curry powder

1 litre vegetable stock

2 bay leaves

Now, I should clarity Marcus’ recipe is done in a pot on the hob. However, I decided to use the slow cooker again.

In went the cauliflower and onion followed by the cumin seeds, mild curry powder, vegetable stock, coconut milk and bay leaves.

Once everything was in it was set to cook on high for 3 hours.

We then added salt & pepper plus it tasted a bit bland for our taste so we added another 1/2 a tsp of mild curry powder plus some grated Parmesan cheese 🤭

On night two we decided to add two tsps of hot curry powder to really give it a bit of oomph. This worked for us but might not for you so watch out. 😁
